Stuffed shells......Stuffed me!

My Chelsea learned a verrrryyyy important recipe this evening.

It is one that I have not used for quite a few years.
I have to wonder why???

It is so, so yummy! I learned it from my mother-in-law during the time I was dating her son. I figured then that it must be a family fav so I made it for Warren whenever I wanted to make a "special" meal...I must have "worn it out" because the kids do not remember me making it.

Funny how our recipes go in cycles, isn't it?
What is it that you used to make that you haven't for a while?
Is it time to try that recipe again?

Stuffed Shells!

Chelsea delighted in spreading a sauce chock full of garden veggies on the bottom of the baking dishes. There was a dash of parmesan cheese, a sprinkle of dried basil and a touch of garlic salt added to the top of the sauce.

Now Chelsea carefully handed me the cooked shells, one at a time, so that I could stuff them full of a ground beef, sour cream and shredded cheese mixture...seasoned with salt and pepper.

I loved watching her eyes dance and grow bigger as she watched the shells being plumped up with their meat and cheese filling.

After we ran out of filling and space in our 2, that is two!, baking dishes Chelsea carefully placed a dash of sauce on each little shell. She was going more for pretty than flavor.
They were beautiful!
Sorry, no pics.

All I have left is one full baking dish on which I applied, (carelessly dumped), the rest of the sauce...ahem...for me it is more about flavor. We will enjoy that meal sometime in the near future.

Now that is the heart of a very scrumptious meal and I am sooo happy that my daughter enjoyed making it with me.

Alicia,
I don't have a written recipe for this so it is a bit different each time. I use what I have on hand...so like this time the shells were stuffed with browned, ground hamburger, a little bit of sour cream and grated cheddar sheese, the next time I might use ricotta, ground beef and cheddar. Just don't overboil the shells, that makes them hard to work wtih. IF you add enough sauce and cover them for the first 15 to 20 minutes that they are in the oven they will soak up that flavor and be wonderful! Uncover them, sprinkle on some shredded cheese, bake for about 10 more minutes... and enjoy!
Just have fun with it. You'll find a combination that you guys will love.
